TY and First Years Spice Up The Rice!

As part of language and culture week 1st year Home Economics made a traditional African dish of Jollof rice. This was served to guests after the show and went down a treat!

Jollof rice traditionally consists of rice, cooking oil, and vegetables such as tomato, onion, red pepper, garlic, ginger and chilli. To enhance the colour of the dish, tomato purée is added. As seasoning, spices, salt, stock cubes, curry powder and dried thyme are used. To complement the dish, chicken, turkey, beef or fish are often served with the dish.

The students really enjoyed making the dish with some saying they will make it every week for dinner!

Thanks to Lauren Corcoran and Conor O Riordan TY for their help. Also thanks to Faith Akinbote for her recipe and to Home Economics Teacher, Ms Johnston.
